About the Plant
Juniperus communis is one of the most widely distributed woody plants on earth, found across the boreal and temperate regions of the Northern Hemisphere from the Arctic Circle to the mountains of North Africa, the Himalayas, and the American Southwest. It is a highly variable species, ranging from a prostrate ground-hugging shrub to an upright tree of 10 meters. The plant is dioecious — producing separate male and female plants — and the female plants produce the characteristic fleshy seed cones that take 18 months to 3 years to ripen from green to blue-black. Juniper berries are the only spice derived from a conifer and are the defining botanical of gin, which by legal definition must be flavored primarily with Juniper. The berries have been found in ancient Egyptian tombs and were used by the ancient Greeks and Romans.
Traditional Context
Juniper berries have been used in botanical and culinary traditions across the ancient world. They appear in ancient Egyptian medical papyri, in the writings of Dioscorides and Pliny, and in the traditional botanical practices of numerous Native American peoples, who used the berries, bark, and leaves of various Juniper species. In TCM the related species Juniperus chinensis is used. In European tradition Juniper was used as a fumigant during plague epidemics and as a flavoring for meats, sauces, and spirits. It remains a key culinary spice in Scandinavian, German, and Alpine cooking.
