About the Plant
Chondrus crispus is a small red alga that grows to about 20 cm in length, forming fan-shaped or branching fronds that range in color from greenish-yellow to dark purple depending on light exposure. It grows attached to rocks in the intertidal and subtidal zones of the North Atlantic, from Ireland and Britain to the northeastern coast of North America. Irish Moss has been harvested along the Irish coast since at least the 4th century CE and became a critical food source during the Irish Famine of the 1840s, when coastal communities survived in part by eating it. It is the natural source of carrageenan — a family of sulfated polysaccharides widely used as a thickening and gelling agent in the food industry.
