Star Anise (Illicium verum)

Star Anise is one of the most visually striking and aromatically powerful botanicals in the world — a star-shaped fruit whose eight-pointed form has made it as beloved in the kitchen as in the apothecary. Native to southern China and northeastern Vietnam, Illicium verum is a small evergreen tree whose dried fruit has been a cornerstone of Chinese culinary and botanical tradition for over three thousand years, and a prized trade commodity along the ancient Silk Road.

Our Star Anise is whole-dried, carefully selected for intact star formation and peak aromatic quality.

About the Plant

Illicium verum is a small to medium evergreen tree that grows to about 8 meters in height, native to the limestone hills of Guangxi province in southern China and parts of Vietnam. The tree produces lance-shaped leaves, small pink to dark red flowers, and the characteristic star-shaped fruits that are harvested just before ripening and sun-dried. Star Anise is the primary natural source of shikimic acid, a compound used in the synthesis of the antiviral drug oseltamivir (Tamiflu), which brought the plant significant scientific attention in the early 21st century. It is one of the five spices in the classic Chinese Five Spice blend and appears in the TCM materia medica as Ba Jiao Hui Xiang.

Traditional Context

Star Anise has been used in Chinese culinary and botanical traditions for over three millennia. It appears in classical TCM texts as a warming aromatic botanical and has been used in traditional Vietnamese, Thai, and Indian cooking for centuries. It was introduced to Europe in the 17th century and became an important flavoring in European liqueurs, including pastis, sambuca, and absinthe.
